Spaghetti w/ Squid Ink (spaghetti al nero di seppia)

In Hong Kong or in Milan, there are very few restaurants who do the spaghetti w/ squid ink.  This pasta dish is not too difficult to make but it requires more work in cleaning the squid and getting the ink sac.  Some people use the ready made ‘ink’ from stores which I personally do not prefer.  Afterall, it is the freshness of the ingredients that make the difference.  Now, let’s see the recipe and the photos :)

Ingredients: (for 4 person)

  • 4 small squid (each 10 to 12 cm)
  • 350 gm spaghetti
  • 300 gm ripe tomatoes ( or 1 can )
  • 1/2 onion or 1 shallot (finely chopped)
  • minced garlic (little)
  • 1 small dried chili pepper (cut into small pieces)
  • 1/2 cup of white wine (optional)
  • 4 – 5 tablespoon of olive oil
  • salt
  • finely chopped parsley (garnish)

First clean the squid throughly and remove the main bone.

Then carefully separate the heads with their tentacles, then remove the guts, setting aside the ink sacks (be careful not to break them).  Remove the ‘skins’ and eyes of the squids.

Cut the squids and their tentacles into small stripes.

 

 

 

Put the tomatoes in pot of boiling water for 2 mins.  Remove from water and when they are cooled down, peel off the skins and remove the seeds and cut into small pieces.

In a large pan or pot, using low heat, heat up olive oil and onion and garlic.  The onion and garlic should be translucent but not brown.  Then put in the chili pepper and squids.  Add in white wine (optional).  Cook for 3 mins.

Add in the ink sacs.  (some people like to cut open the sac first and gather all the ink before putting in but I was taught by an experienced chef that the sac would melt during the cooking process ) Stir until all ink are evenly distributed. Put in tomatoes.  Simmer for 20 mins.

Meanwhile prepare and cook spaghetti.

Add salt in the squid sauce according to personal preference.  Put in spaghetti and change to high heat. Stir gently and quickly to evenly coat the spaghetti.  Transfer onto casserole or plate and garnish with parsley.

    How is it that just anybody can publish a blog and get as popular as this? Its not like youve said anything extremely impressive more like youve painted a quite picture about an issue that you know ! I dont want to sound mean, here. But do you really think that you can get away with adding some quite pictures and not really say anything?
