Pasta with mushroom and bacon – Bucatini con funghi e guanciale (pancetta affumicata)

I love italian mushrooms and bacon and this is the recipe I learned last week from an Italian chef. In Italy there is the smoked pork cheeks (guanciale), it is tastier and leaner than usual bacon (pancetta affumicata). But normal bacon will do just fine.

Ingredients: (for 4 person)

  • 400 g italian mushrooms
  • 200 g italian bacon
  • 200 g tomatoes ( 3 medium ones)
  • 250 g tomato sauce (not ketchup)
  • 320 g bucatini or spaghetti
  • 1 garlic clove (finely chopped)
  • 1 cup dry white wine
  • 4 tablespoon of extra virgin olive oil
  • 150 g pine nuts
  • 1 bunch of parsley (finely chopped for garnish)
  • salt and pepper


  1. Wash mushrooms, remove stems and thinly sliced.
  2. Cut bacon into small pieces.
  3. Soak tomatoes in hot water for 3 – 4 minutes and remove skins. Then cut into small pieces.
  4. In a large frying pan using medium heat, put in olive oil with mushroom, add in white wine. Stir and cook for 2 – 3 minutes till almost all white wine has evaporated.
  5. Add in bacon and fry for 3 mins.
  6. Put in tomatoes and tomato sauce and let it simmer for 10 mins. Add salt and pepper to taste.
  7. In the meantime, prepare pasta in boiling salted water as per instructions on the packet or until it is al dente. Drain well.
  8. Add pasta into the mushroom, tomato sauce and add in pine nuts.
  9. Cook in high heat for 30 seconds, mix well.
  10. Transfer onto casserole and garnish with parsley. Serve hot.
