Penne with Creamy cauliflower

This recipe is easy to make and very tasty. The secret is to get good quality anchovies. Omit the chilies if you do not like spicy food.

Ingredients: ( for 4 person)

  • 500 g cauliflower (washed, drained and roughly chopped)
  • 360 g dried penne
  • 250 g fresh cream / crème fraîche
  • 5 tablespoon extra virgin olive oil
  • 2 anchovy fillet in olive oil (drained , remove bones and roughly chopped)
  • 2 garlic cloves, sliced
  • large pinch of crushed dried chillies ( seeds removed)
  • 4 tablespoon of freshly grated Parmesan cheese (additional 3-4 tablespoon to serve)

  1. Bring a large saucepan of water to boil. Add in 2 tablespoon of salt.
  2. Put in cauliflower and penne. Cook for about 15 mins or according to the penne packet instruction until al dente and the cauliflower is cooked and starting to fall apart.
  3. Meanwhile, pour oil into a large frying pan and add anchovies, crushed chilies and garlic and heat over very low fire for 6-8 mins till anchovies have melted into the oil. Take care that garlic should be slightly brown but not burnt.
  4. Drain the penne and the cauliflower. Then put both penne and cauliflower into the pan with the heated anchovy oil.
  5. Toss over a high heat for 30 seconds.
  6. Add in fresh cream and continue to stir for another 30 seconds.
  7. Put in the parmesan cheese and stir well.
  8. Transfer into pasta dish and serve with extra parmesan.
